Another week has past which means another week of meal planning is approaching. Does anyone else roll their eyes at the thought of dinner? That dreaded question…what do you want to eat? I feel like for the most part I’m pretty good at meal planning but every once in awhile I hit a wall and can’t come up with anything to make! I love cooking so it isn’t about having to cook it’s just about WHAT AM I MAKING! I figured I couldn’t possibly be the only one who goes through this so I thought I would share what I like to call the repeat offenders. These are meals/recipes that are favorites in our house. They are super easy and quick to make and are delicious! The majority of these recipes are chicken but some can be substituted for pork or any other type of meat.
First up is stuffed chicken! This dish takes no time at all and has such amazing flavor. I stuff the chicken with sautéed spinach, fresh mozzarella, and sun dried tomatoes. I sauté the spinach in a little butter and garlic, butterfly two chicken breasts and lay the spinach in it. Next I put two pieces of fresh mozzarella and then top it off with julienned sun-dried tomatoes. I coat the top of them with Italian seasoning and then brown the top and bottom in a sauté pan and then throw it in the oven for about 25 minutes. The oil from the sun-dried tomatoes oozes out and I pour it right over the chicken for a delicious sauce when it’s all done!
Next up is Chicken and Dirty rice! This is a dish that whenever I make it for friends and family they all ask me to make it again! The original recipe calls for sausage with the chicken but I just stick to the chicken alone. When seasoned chicken, rice, celery, onion, and jalapeño are your only ingredients you know it’s going to be an easy meal. One pot meals are my jam! You can find the recipe HERE.
When you’re sick of chicken then this next dish will be your go to! Honey Siracha Meatballs. I can’t even begin to tell you how excited my husband gets when he asks what’s for dinner and I say I’m making these. It’s the little things right haha. These are definitely not your ordinary meatballs. They have the best taste and while they are a little spicy, if you’re into that sort of thing you are going to love these! You can make a veggie to go on the side but I usually just make a nice big salad and bam dinner is done! I usually ask the butcher for a pork/beef/veal mix for a little versatility! Another staple in our house is tortellini with chicken and sun-dried tomatoes. Hmm I’m just now realizing I may have a thing for sun-dried tomatoes! I love this meal because it’s something I always have on hand if I can’t think of anything! I cube and cook the chicken and throw it in with tortellini, sun-dried tomatoes and pesto. Super easy and so good. My favorite way to have it is with a salad full of feta cheese. I don’t know what it is about that combo but I love it!
Tired of chicken? How about Honey Dijon Mustard Pork Chops? I always get bone-in chops because they are much more tender as I find boneless dries out. I cook the pork chops on each side and then make this yummy sauce and let it cook in it for a bit before plating it all. Toss some potatoes on a sheet pan to roast, make a salad and you’ve got yourself a great meal! Find the full recipe HERE.
Lastly for our repeat offenders is one pot lemon herb chicken! I love lemon chicken, like looooove.
